Strawberry and vanilla bombe
Suitable for vegetarians
A fancy dessert that's easy to whip up, and explodes with the flavour of summer fruits
Serves 8
Ingredients
  • Half quantity vanilla icecream
  • Half quantity strawberry icecream
  • Summer fruits and fresh mint to serve

Method
1 Chill a 1 litre bowl in the freezer. Allow the vanilla icecream to soften at room temperature for 10 minutes, or until you can press it into shape. Spread on base of bowl and up the sides to 4cm thickness.

2 Put a 0.5 litre pudding bowl in the centre and push down so the icecream comes to the top of the outside bowl.This helps to give an even shape to the outside layer of icecream. Put in freezer for 1 hour until firm, then remove smaller bowl. Return to freezer for an hour until solid.

3 Soften the strawberry icecream, use it to fill the centre of the bowl. Cover and freeze for 6 to 8 hours, or leave overnight.

4 Dip the bowl in tepid water for 5 seconds and invert onto a plate. Decorate with summer fruits and sprigs of mint to serve.
