Suitable for vegetarians
This chilled soup is refreshing on a hot day

Ingredients
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 1 bay leaf
- 2 tbsp olive oil
- 1 cucumber, peeled and chopped
- 600ml vegetable stock
- 50g Asda ground almonds
- 6 tbsp natural yogurt
- Cucumber slices and ice cubes, to serve
Method
1 Fry the onion, garlic and bay leaf in the oil for 10 minutes, until the onion is soft but not browned.
2 Stir in the cucumber and stock. Bring to boil, cover and simmer for 10 minutes. Remove from heat and cool. Discard the bay leaf.
3 Transfer to a food processor and whizz for a few seconds until smooth. Stir in almonds and yogurt, then season. Pour into a jug, cover and chill overnight.
4 Transport in a chilled vacuum flask and serve in bowls with sliced cucumber and ice cubes.
