Cooking the tomatoes concentrates their flavour for an intense taste.

Ingredients
- 8 firm Asda vine-ripened tomatoes, halved
- 3 cloves garlic, crushed
- 2 tbsp balsamic vinegar
- 1 tsp olive oil
- Fresh basil leaves, to serve
Method
1 Preheat the oven to 200C/Gas 6. Put the tomatoes, cut side up, in a layer in a roasting dish.
2 Mix together the garlic, vinegar and oil. Pour over the tomatoes and season, then roast for 25 to 30 minutes, until tomatoes are softened but holding their shape.
3 Transfer to a shallow plastic container that is big enough to hold the tomatoes in one layer. Scatter with torn basil leaves.
