Poached peaches in wine
An aromatic pudding that's a fitting finale for a picnic
Serves 4
Preparation time 25 minutes
Plus cooling time
Ingredients
  • 4 large ripe peaches, washed, stoned and quartered
  • 1 vanilla pod, halved and deseeded, reserving the seeds
  • 1tbsp clear honey
  • 150ml sweet wine wine
  • Fresh mint, to decorate
  • Mascarpone, to serve
Method
1 Put the peaches in the pan with the vanilla pod and seeds, honey and 150ml water. Heat until simmering, cover and cook for 10 minutes. Remove from heat and transfer the peaches and cooking juices to a heatproof bowl.

2 Pour the wine over the peaches and leave to cool. Discard the vanilla pod, cover and chill. Pack in a sealable container. Serve in glasses decorated with mint leaves and a spoonful of mascarpone.
