Ingredients
- 1tbsp olive oil
- 1 onion, chopped
- 1 clove garlic, crushed
- 0.5tsp ground cumin
- 300g can Asda chickpeas, drained
- 100g fresh wholemeal breadcrumbs
- 1 egg
- 2tbsp tomato ketchup
- 200g Asda feta, crumbled
- 2tbsp sunflower oil
- Pitta breads, diced cucumber and natural yogurt, to serve
Method
1 Heat the oil in a pan and fry the onion and garlic until softened. Stir in the cumin and cook for 1 minute. Transfer to a food processor with the chickpeas, breadcrumbs, egg and ketchup, and process until smooth. Put in a bowl, add the feta and mix well.
2 Using clean wet hands, shape mixture into 16 balls. Chill for 20 minutes. Preheat the oven to 200C/Gas 6. Line a baking tray with nonstick baking parchment.
3 Arrange the falafels on the lined tray, drizzle with oil and bake for 15 minutes. To serve, warm the pitta breads and cut in half, then fill with falafels and diced cucumber, and drizzle with yogurt.
