Turn a classic recipe into an oriental surprise

Ingredients
- 4 large eggs
- 1tbsp chopped fresh coriander
- 1tsp green Thai curry paste
- 350g pack Asda beansprout and vegetable stir-fry
- 1tbsp rich soy sauce
- Plus 1tbsp sunflower oil
Method
1 Beat the eggs with the chopped fresh coriander, and set the mixture aside. Heat half the oil in a frying pan and stir-fry the curry paste for 1 minute. Add the vegetables and stir-fry for a further 3 minutes. Transfer to a plate and keep warm.
2 Wipe the pan with paper kitchen towel, add a little more oil and pour in half the egg mixture. Cook for 2 to 3 minutes, until the base is golden. Remove from the pan and keep it warm. Repeat to make another omelette.
3 Put half the vegetables in the centre of each and sprinkle with soy sauce. Fold the edges over the filling to make a parcel and turn it over. Serve warm.
