This zesty soup is ideal for a light, bright meal

Ingredients
- 1 onion, finely chopped
- 250g pack Asda cooked beetroot, diced
- 600ml vegetable stock
- Zest and juice of 1 orange
- Soured cream, to serve
- 1tbsp sunflower oil
Method
1 Heat the oil in the pan and fry the onion for 10 minutes, until it has softened. Add the beetroot, vegetable stock, orange zest and juice, then simmer for 10 minutes.
2 Allow to cool slightly, then whizz the soup in a blender until smooth. Chill before serving.
3 Serve with a spoonful of soured cream. Garnish with orange zest, if you wish.
