Just add roast tomatoes for a simple supper

Ingredients
- 300g potatoes, peeled, cut into even-sized pieces
- 25g butter
- 120g pack Asda pancetta
- 150g cabbage, chopped and cooked
- 1tbsp sunflower oil
Method
1 Cook potatoes in salted boiling water for 10 to 12 minutes. Drain, return to heat to lose excess moisture, mash with butter, season.
2 Heat a little oil and fry pancetta until crispy; add the cabbage and fry for 3 minutes. Stir into the mash, shape into 4 rounds and flatten. Chill until firm.
3 Heat a little oil in a shallow pan and fry the cakes for 4 minutes on each side, until golden.
