Prepare these fish cakes in advance then cook just before you’re ready to serve

Ingredients
- 540g pack Asda frozen white fish fillets, defrosted
- 2tbsp green Thai curry paste
- 3 spring onions, chopped
- 2tbsp roughly chopped fresh coriander
- Zest and juice of 1 lime
- 1 red chilli, deseeded
- Vegetable oil, for frying
Method
1 Remove any skin and bones from the fish and roughly chop. Put in a blender or food processor with curry paste, spring onions, coriander, lime zest, juice and chilli. Blend until minced but not puréed.
2 Shape the mixture into 10 balls and flatten into cakes. Chill the cakes until firm.
3 Heat oil in a frying pan and fry in batches over a medium heat for 1 minute each side. Delicious with sweet chilli dipping sauce.
