If you prefer, you can use long grain rice instead of basmati

Ingredients
- 4 spring onions
- 2 green or red chillies, deseeded and finely chopped
- 500g cooked basmati rice
- 2tbsp light soy sauce
- 2tsp Thai fish sauce
- 1 egg, beaten and seasoned
- 2tbsp vegetable oil, for frying
Method
1 Heat 1 tablespoon oil in a wok. Add veg and fry for 1 minute. Add rice and stir-fry for 3 to 4 minutes. Sprinkle with soy and fish sauce, stir. Keep warm.
2 Heat 1 tablespoon oil in a frying pan. Pour in a little of the seasoned egg to make a thin layer. Cook for 1 to 2 minutes, then roll up and slice into strips and repeat with the remaining egg. Serve the rice in warmed bowls with the omelette strips scattered over the top.
