Lancashire hotpot
This was wrapped up in a blanket for miners to take with them down the pits!
Serves 4
Preparation time 20 minutes
Cooking time 2 hours, 30 minutes
Ingredients
  • 4 Asda lamb chops
  • 900g potatoes, thinly sliced
  • 2 medium onions, thinly sliced
  • 570ml lamb or beef dtock (or water)
  • 55g butter, melted

Method
1 Preheat the oven to 180C/Gas 4. Remove any surplus fat from the lamb cutlets. Cover the base of a 1.7 litre ovenproof casserole dish with just under half the potato slices and season well.

2 Arrange the lamb on top of the potato layer and cover with the slices of onion. Season and then arrange overlapping layers of potato on top of the meat and onion.

3 Pour over the stock or water until the liquid just reaches the top layer of the potatoes but doesn't dislodge them. Brush the top with melted butter, cover and bake for 2 hours. Remove the lid and cook for 20 to 30 minutes, until the potatoes are golden.
