Baking chicken in a crust keeps it moist and juicy.

Ingredients
- 1.2-1.8kg Asda Extra Special whole corn-fed chicken
- 1 sprig fresh rosemary
- 2 garlic cloves
- 1kg plain flour
- 1kg coarse sea salt
Method
1 Preheat oven to 180C/Gas 4. Remove packaging from chicken and put the rosemary and garlic inside the cavity. Mix flour and salt in a bowl and add 6 to 8 tablespoons cold water. Knead to a stiff dough.
2 On a floured board, roll out dough to a circle, big enough to enclose the chicken. Place the chicken in the middle and wrap in pastry; pinch the edges to seal.
3 Put in a roasting tin and bake for 1 hour 30 minutes to 1 hour 45 minutes. To serve, break off and discard the crust.
