This combination of flavours is a classic fro the southern US.

Ingredients
- For the fritters:
- 125g plain flour
- 1 small egg
- 125ml milk
- 200g can sweetcorn, drained
- 1 small banana, sliced
- 1 small egg white
- For the chicken:
- 125g plain flour
- 0.5tsp cayenne pepper
- 1.13kg pack Asda chicken drumsticks
- 2 eggs, beaten
- 225g white breadcrumbs
- sunflower oil, for frying
Method
1 For the fritters, sift flour and a pinch of salt into a bowl, make a well in the centre and add whole egg. Gradually beat in milk. Stir in the corn and banana; set aside.
2 For the chicken, season flour with salt, pepper and cayenne. Toss drumsticks in flour, then dip in the egg, then in breadcrumbs.
3 Half fill a deep pan with the oil, and heat until a cube of bread, dropped in, turns golden. Add drumsticks four at a time, and cook for 15 minutes, until golden and cooked through. Remove with a slotted spoon and drain on kitchen paper. Keep warm.
4 Whisk the egg white until stiff and fold into the fritter mixture. Heat 3 tablespoons of oil in a frying pan and drop spoonfuls of the mixture into the oil. Fry for 2 to 3 minutes each side, until puffed and golden. Repeat until all has been used. Drain on kitchen paper and serve with the chicken.
