Mediterranean salad
Oily fish like tasty sardines are a good catch, rich in healthy omega 3 oils
Serves 4
Preparation time 10 minutes
Ingredients
  • 4tbsp olive oil
  • 4tsp lemon juice
  • 90g bag Asda baby leaf and herb salad
  • 8 baby plum tomatoes, halved
  • 4 spring onions, trimmed and sliced
  • 1 yellow pepper, deseeded and sliced
  • 2 x 120g cans Asda sardines in oil, drained
  • 2 pitta breads
Shop online for these ingredients
Method
1 Preheat grill. Whisk the oil and lemon together and season to taste. Put the salad, tomatoes, spring onions and pepper in a bowl, add dressing and toss. Break the fish into pieces. Toast the bread on both sides and cut into squares.

2 Toss the pitta bread and sardines together with the salad.
