A melt-in-the-mouth favourite that never fails to impress

Ingredients
- 1 x 200g Asda sponge flan case
- 2 x 300g cans Asda blackcurrants in juice, drained
- 11⁄2 x 500ml tubs Asda Extra Special Vanilla Ice Cream
- 4 egg whites
- 225g caster sugar
Method
1 Preheat the oven to 230C/Gas 8 – it must be very hot. Put the flan case on an ovenproof plate. Fill it with the blackcurrants. Pile the ice cream on top, pressing each spoonful down to make an even dome. Put in the freezer while you make the meringue.
2 Put the egg whites in a bowl and whisk to form stiff peaks. Add in a tablespoon of sugar at a time, whisking until stiff with each addition. Spread over the ice cream, completely covering it.
3 Bake for 4 to 5 minutes until the meringue is tinged gold.
