Hazelnut meringues

  • Ingredients for 1 quantity meringue mixture (see 'Basic Swiss meringue' for recipe)
  • 100g pack Asda hazelnuts

Method
1 Preheat oven to 190C/Gas 5. Roast the nuts for 5 to 10 minutes, until golden. Leave to cool. Turn oven to 110C/Gas 0.5.

2 Chop 8 nuts and set aside; put the rest into a food processor. Whizz with 1 tablespoon of the sugar until roughly ground – don’t overdo it or they will become oily.

3 Prepare the meringue mixture. At step 2 fold in the toasted hazelnuts with the sugar. Stick baking paper to the baking sheets with smears of the meringue. Drop spoonfuls of the mixture, spaced apart, according to the size you want. Sprinkle with the extra nuts.

4 Bake for 1 hour 30 minutes to 2 hours, until meringues are dry and lift easily. Leave to cool. Lovely with whipped cream and raspberries.
