Ligurian lemon linguine
Suitable for vegetarians
A speedy supper dish that is ready in the time that it takes to cook the pasta
Serves 4
Preparation time 25 minutes
Ingredients
  • 300g linguine
  • 400g Asda tenderstem broccoli
  • 1tbsp olive oil
  • 2 cloves garlic, crushed
  • Zest and juice 0.5 lemon
  • 50g Asda pine nuts, toasted
  • Grated Parmesan, to serve

Method
1 Bring a large pan of salted water to the boil. Add the linguine and cook according to the packet instructions.

2 Meanwhile, bring another large pan of water to the boil. Drop the florets into the water and blanch for 1 to 2 minutes until almost tender, then drain.

3 Heat the oil in a frying pan over a medium heat and add the crushed garlic. After 30 seconds, add the broccoli florets and stir-fry for a couple of minutes. Add the lemon zest and toasted pine nuts and stir-fry for another minute.

4 Drain the pasta and return to the pan. Pour on the broccoli mixture and lemon juice and stir. Serve with grated Parmesan.
