Ingredients
- 400g Asda tenderstem broccoli
- 1 large egg yolk
- 225ml iced water
- 110g plain flour, sifted
- Sunflower oil, for deep-frying
- Soy sauce or chilli-dipping sauce, to serve
Method
1 Blanch the tenderstem broccoli for 30 seconds, plunge into cold water, then dry well on kitchen paper. Heat the oil on a deep pan to 170C.
2 Beat the egg yolk and ice-cold water with a fork. Add the flour and roughly mix together - don't worry about any lumps at this stage.
3 Coat a few pieces of the tenderstem broccoli with the batter and deep-fry for 3 minutes - they should not colour. Drain the battered broccoli on crumpled kitchen paper (be careful, as they will be hot) then keep warm while you cook the rest of the vegetables in batches. Serve immediately with either soy or chilli dipping sauce.
