Traditionally cooked on a griddle over a charcoal brazier

Ingredients
- 8 Asda flour tortillas
- 225g red Leicester, grated
- 50g drained sliced jalapenos, finely chopped
- 4 spring onions, trimmed and sliced
- Plus vegetable oil for frying and tomato salsa to serve
Method
1 Heat a heavy-based pan and brush with a little oil. Put a tortilla in the pan, scatter with cheese, a few chillies and spring onions. Cover with another tortilla and press down firmly. Cook over a medium heat for 2 to 3 minutes until the cheese is just beginning to melt.
2 Carefully turn the tortilla over and cook the other side for 2 to 3 minutes. Cut into quarters and serve with the tomato salsa.
