A tasty way to add to your five-a-day fruit and veg quota

Ingredients
- 4 red peppers
- 1 onion, chopped
- 250g beef mince
- 400g can Asda chopped tomatoes with chilli and peppers
- 250g pack microwavable plain long grain rice
- 1tbsp Asda Mexican Style Stir Thru pesto
- 50g Asda fiery mex cheese
- Plus 2tbsp vegetable oil for frying
Method
1 Preheat oven to 200C/Gas 6. Halve the peppers, remove seeds and brush a little oil over each half. Cook for 10 minutes. Meanwhile, heat the remaining oil in a pan. Fry the onion and mince for 5 minutes until the mince browns. Add tomatoes, rice and 1 tablespoon of pesto, stir and bring to the boil.
2 Spoon into peppers, grate and scatter on cheese and return to the oven for 15 minutes.
