Baklava

Ingredients
  • 275g caster sugar
  • Pinch of ground cinnamon
  • 4tbsp clear honey
  • 125g unsalted butter
  • 300g almonds, chopped
  • 275g Asda frozen filo pastry, thawed

Method
1 Put 250g sugar and the cinnamon in a pan with 325ml water. Heat gently until the sugar dissolves. Add the honey and cook without stirring for 15 minutes. Cool, then chill.

2 Preheat oven to 170C/Gas 3. Melt the butter; use a little to grease a large, deep baking dish. Mix the nuts with the sugar.

3 Unroll the filo pastry and roughly trim to fit the dish. Brush five sheets with butter and use them to line the dish. Scatter with one third of the almonds. Cover with three more layers of buttered filo pastry sheets, sprinkle with half the remaining almonds, then add another three layers of buttered pastry. Scatter with the remaining nuts, then top with the rest of the pastry, buttered.

4 Cut through the top layers of pastry to mark about 16 diamonds. Don’t cut all the way down. Bake for 30 minutes, then increase the temperature to 200°C/Gas 6 and bake for 10 more minutes.

5 Pour the cold syrup over the baklava. When it's cold, cut the pieces along the marked lines.
