The freshness of the seafood is complemented by the crisp white wine

Ingredients
- 2 x 500g bags Asda fresh mussels
- 175ml white wine
- 2 cloves garlic, crushed
- 3tbsp Asda chopped fresh parsley, plus extra for garnishing
- 125g Asda raw tiger prawns
- 1 basic quantity of 'risotto alla Milanese', but made with fish stock (see recipe)
Method
1 Scrub the mussels under running water and discard any that are open, broken or do not close when tapped.
2 Put the white wine, garlic and parsley into a large pan and bring to the boil. Add the prawns and mussels, cover, reduce the heat to medium and cook for 6 to 8 minutes until the mussels have opened. Discard any that remain closed. Set aside to cool.
3 When the mussels and prawns are cool enough to handle, set aside a few for garnish and remove the rest from their shells.
4 Meanwhile, make the basic quantity of risotto according to the instructions, replacing the chicken stock with fish stock.
5 Five minutes before the end of the cooking time, carefully stir in the tiger prawns and mussels, including those reserved for garnishing, to gently reheat. Sprinkle with extra chopped fresh parsley.
