A tropical mix of sweet and spicy flavours

Ingredients
- 1tbsp sunflower oil
- 402g pack Asda chicken goujons
- 500g piece butternut squash, peeled and cut into 1½cm pieces
- 1 clove garlic, finely chopped
- 2tbsp Thai green curry paste
- 2tbsp Thai fish sauce
- 1tsp sugar
- 400ml can coconut milk
- 1 large red chilli, deseeded and finely chopped
- Fresh Asda coriander, chopped
- Thai fragrant rice, to serve
Method
1 Heat the oil in a large nonstick saucepan or wok, add the chicken and stir-fry for 4 minutes or until white all over. Add the butternut squash and garlic and stir-fry together for another 3 minutes.
2 Add the curry paste, fish sauce, sugar, coconut milk and 100ml water. Bring to the boil, cover and simmer for 15 minutes (use a baking sheet to cover a wok). Sprinkle with chopped chilli and coriander and serve with Thai rice.
