The quantities for this simple recipe are easily doubled if you’d like to impress a special friend!

Ingredients
- 1tbsp sunflower oil
- 1 small onion, finely chopped
- 0.5in piece of fresh root ginger, peeled and grated
- 2 garlic cloves, crushed
- 0.5tsp Asda ground cumin
- 1tsp Asda ground coriander
- 0.5tsp Asda turmeric
- 25g/1oz creamed coconut
- 1 green chilli, deseeded and thinly sliced lengthways
- 150g packet Asda Extra Special whole tiger prawns
- 2tbsp chopped fresh Asda coriander
Method
1 Heat the oil in a large frying pan and gently cook the onion for 3 to 4 minutes until soft, then add ginger and garlic and cook for another minute. Stir in the remaining spices and cook, stirring, for 1 to 2 minutes.
2 Stir in the coconut, 125ml water and the chilli and simmer gently until the coconut has dissolved. Add the prawns and stir in half the coriander. Simmer for 2 to 3 minutes, then remove from the heat. Scatter with remaining coriander and serve with plain steamed rice.
