Perfect Christmas gravy
Make the gravy while the turkey is resting, then reheat, if necessary, just before serving.
Serves 6
Preparation time 20 minutes
Ingredients
  • 1 tbsp plain flour
  • 2 x 300g tub fresh chicken stock
  • 2tbsp redcurrant jelly

Method
1 Remove all but one tablespoon of warm juices from the turkey's roasting tin and place on the hob over a medium heat. Stir the flour into the turkey juices and cook for 1 to 2 minutes.

2 Remove the pan from the heat and gradually pour in the chicken stock, stirring constantly to blend together.

3 Return to the heat and slowly bring to the boil. Simmer for 10 minutes until the gravy thickens. Stir in the redcurrant jelly until melted. Season to taste and strain into a warmed jug.
