Red cabbage with pears
Suitable for vegetarians
Tastes even better when made in advance – perfect!
Serves 6

Cooking time 1 hour
Ingredients
  • 25g butter
  • 1 large onion, finely sliced
  • 0.5tsp ground cinnamon
  • Pinch of nutmeg
  • 1 small red cabbage, finely sliced
  • 2 pears, peeled, cored and sliced
  • 4tbsp red wine vinegar
  • 2tbsp light muscovado sugar
  • 2tbsp redcurrant jelly

Method
1 Melt butter in a large shallow pan. Gently cook onion for 10 minutes until softened.

2 Add spices, cabbage, pears, vinegar, sugar and 110ml of water. Season. Bring to the boil, then cover and simmer on lowest heat for 1 hour. Stir in the jelly. To reheat, put in pan with 2 tablespoons of cold water. Cook over low heat until piping hot.
