Fresh and zingy salsa brings out the haddock's flavour

Ingredients
- 2 x 200g pieces Asda fresh haddock, skinned
- 1tbsp seasoned plain flour
- 3tbsp olive oil
- 2tsp lemon juice
- 0.5tsp wholegrain mustard
- 6tbsp mixed fresh herbs (parsley, chives, basil, tarragon)
- 1tbsp capers
Method
1 Lightly dust the haddock with the flour. Heat 1 tablespoon of oil in a frying pan, add the haddock and fry for 2 to 3 minutes each side until the the fillet is crisp, golden and flakes easily.
2 Meanwhile, mix the remaining olive oil with the lemon juice, mustard and herbs and 1 tablespoon of cold water in a small bowl. Stir in the capers then spoon over the pan-fried haddock. Serve immediately.
