Great after a refreshing stroll in the winter sunshine

Ingredients
- 40g butter
- 3 leeks, trimmed, rinsed and sliced
- 600g potatoes, diced
- 750ml fish or vegetable stock
- 400g Asda fresh haddock fillets
- 450ml milk
- Snipped fresh chives, to garnish
- Croutons, to serve (optional)
Method
1 Melt the butter in a large saucepan, stir in the leeks, cover and cook gently for 5 minutes. Add the potatoes and stock to the pan, season well and simmer for 10 to 15 minutes until the potatoes are tender.
2 Meanwhile, place the haddock in a pan with the milk then season. Bring to a simmer, cover and poach gently for 5 minute. Lift the fish out of the liquid (reserving the liquor), discard the skin and break into flakes.
3 Add the liquor to the soup, then liquidise half the soup to a purée. Return to remaining soup in pan, add the fish and reheat. Serve with chives and croutons.
