Ingredients
- 6 Asda fresh haddock, skinned and cut into chunky cubes
- Juice of 1 lemon
- 0.5tsp Asda ground turmeric
- 400ml coconut milk
- 3 cloves garlic, crushed
- 4 thin green chillies, halved
- 5cm piece root ginger, peeled and grated
- 2tsp Asda ground coriander
- 1tsp Asda ground cumin
Method
1 Toss the haddock with the lemon juice, turmeric and a pinch of salt. Leave for 5 minutes. Meanwhile, top the coconut milk into a wok or large frying pan and add the garlic, chillies, ginger, coriander and cumin. Bring to the boil and simmer for 2 minutes.
2 Add the fish, simmer and poach for 2 minutes. Remove from heat, cover pan and let it rest for 3 minutes. Serve with rice.
