Sri Lankan fish curry
If you're a lover of spicy and fiery food, why not add some extra chillies to this exotic dish?
Serves 4
Preparation time 20 minutes
Ingredients
  • 6 Asda fresh haddock, skinned and cut into chunky cubes
  • Juice of 1 lemon
  • 0.5tsp Asda ground turmeric
  • 400ml coconut milk
  • 3 cloves garlic, crushed
  • 4 thin green chillies, halved
  • 5cm piece root ginger, peeled and grated
  • 2tsp Asda ground coriander
  • 1tsp Asda ground cumin

Method
1 Toss the haddock with the lemon juice, turmeric and a pinch of salt. Leave for 5 minutes. Meanwhile, top the coconut milk into a wok or large frying pan and add the garlic, chillies, ginger, coriander and cumin. Bring to the boil and simmer for 2 minutes.

2 Add the fish, simmer and poach for 2 minutes. Remove from heat, cover pan and let it rest for 3 minutes. Serve with rice.
