A light, quick dish combining a wonderful range of flavours

Ingredients
- 1tbsp Asda olive oil
- 368g pack Asda frozen, boneless, skinless cod fillets, or cod portions, thawed
- 4tsp Asda pesto
- 50g Asda Extra Special Parmesan, freshly grated
- 60g pack Adsa Extra Special Parma ham
Method
1 Preheat oven to 180C/Gas 4. Grease an ovenproof dish with a little olive oil - it should be just large enough to hold the fish fillets in a single layer. Put the cod in the dish and spread the pesto evenly over the top.
2 Sprinkle with freshly grated Parmesan cheese and gently drape a slice of Parma ham over each fish fillet. Drizzle with the remaining olive oil.
3 Bake in the pre-heated oven for 15 to 20 minutes. Serve immediately. Perfect with roasted tomatoes, that you can cook around the fish fillets.
