A colourful dessert with warming spices

Ingredients
- 250g soft brown sugar
- 290ml medium sherry
- 1 cinnamon stick
- 6 cloves
- Zest of 1⁄2 lemon
- Zest of 1⁄2 orange
- 4 red grapefruits
- 4 large oranges
- 10 kumquats
- 1 pineapple, peeled
Method
1 1Heat sugar in 425ml water until dissolved. Add the sherry, cinnamon, cloves and zest. Bring to the boil, simmer for 15 minutes and stand for 30 minutes.
2 Meanwhile, peel and segment the grapefruit and oranges. Slice the kumquats widthways, cut the pineapple into chunks.
3 Strain syrup into a pan and bring to the boil. Add fruit, then simmer for 3 minutes. Remove cinnamon stick and cloves; serve warm. Delicious with shortbread and cream.
