A sweet and nutty stir-fry with a tangy bite makes an ideal midweek supper

Ingredients
- 1 orange
- 1tbsp Asda sesame oil
- 50g cashew nuts
- 605g pack Asda chicken thigh fillets, cut into strips
- 250g packet Asda exotic stir fry
- 200g jar Asda kung pao stir fry sauce
- Rice, to serve
Method
1 Grate zest from the orange then peel and segment over a bowl, reserving any juice. Heat the oil in a wok or large frying pan and stir-fry the nuts for 1 minute until they are golden; remove and set aside.
2 Add the chicken to the pan with the zest and stir-fry for 3 minutes until beginning to brown. Add the exotic stir fry mix and orange juice to the pan and stir-fry for 2 more minutes.
3 Pour over the kung pao sauce, add the orange segments and simmer for 1 to 2 minutes until just heated through. Serve immediately with boiled rice.
