Ingredients
- 175g Asda ginger nuts, crushed
- 75g butter, melted
- 250g Asda ricotta
- 200g Asda Soft & Creamy Cheese
- 200g Asda crème fraîche
- 6tbsp Asda ginger preserve
- 3 large eggs, beaten
- 225g caster sugar
- 1tbsp cornflour
- Zest of one lemon, grated
Method
1 Preheat the oven to 150C/Gas 2. Line the base of a 20cm springform cake tin with greaseproof paper. Mix together the biscuits and butter, and press into the tin base.
2 Put all the remaining ingredients into a food processor and whizz together, or beat ingredients in a large bowl. Pour over biscuit base and bake for 1 hour 15 minutes. Leave in the oven to cool until completely cold.
