Ingredients
- 200g pack baby courgettes, cut into 1cm slices
- 3 red or yellow peppers, deseeded and cut into squares
- 220g pack baby plum tomatoes
- 3tbsp extra virgin olive oil
- 1 large red onion, cut in wedges
- 8 large pancakes (see 'Basic pancakes' for recipe)
- 200g Asda English goats' cheese, grated
- Sprinkling of chopped chives
Method
1 Preheat oven to 210C/Gas 7. Put courgettes, peppers and tomatoes in a bowl with the oil. Add the red onion, separating the layers, and toss until coated in oil. Spread the vegetables out in a large roasting pan and season. Roast for 25 minutes. Meanwhile, make the pancakes.
2 Place 2 pancakes on a baking sheet and cover each with a third of the veg and a quarter of the cheese. Top each layer with another pancake and repeat layers, so you have 2 stacks of 4 pancakes.
3 Scatter the remaining cheese and chives on top and bake for 15 minutes. Slice in half if serving four.
