A tasty salad packed with fresh ingredients and wonderful flavours

Ingredients
- 4tbsp Asda extra virgin olive oil
- 1tbsp lemon juice
- 350g tomatoes, sliced
- 1 cucumber, halved horizontally and sliced
- 1 red onion, halved and finely sliced
- 1 yellow or orange pepper, deseeded and finely sliced
- 200g pack Asda feta, cubed
- 12 Asda black Greek olives
- 8 whole Asda sardines, gutted
- 2tbsp olive oil
Method
1 Put the extra virgin olive oil and lemon juice in a large bowl. Season and whisk together. Add the vegetables and toss well until completely coated. Scatter with the feta and black olives.
2 Preheat the grill to medium. Make three slashes on each side of the sardines. Put them on the grill pan, brush with half the olive oil and season.
3 Cook the sardines for 4 to 5 minutes on each side, brushing with more oil and seasoning after turning. The flesh should be firm, opaque and come away from the bone easily. Serve immediately with the Greek salad.
