ASDA part of the Wal-Mart family

• 150g fresh breadcrumbs
• 4tbsp desiccated coconut
• 1 egg, beaten
• 3 heaped tbsp plain white flour
• 375g Asda cod, skinned
• Dipping sauce, to serve

1 Preheat the oven to 200C/Gas 6 and grease a baking tray. Mix together the breadcrumbs and coconut. Put the egg, flour and breadcrumb mixture onto three separate large plates. Cut the fish into 1cm strips and dip it into the egg, then the flour, then coat with the crumbs.

2 Arrange on a baking tray and cook for 12 to 15 minutes, turning half way through, until golden brown. Serve with a tomato ketchup or thousand island dressing dip.
