Sweetcorn pancakes with bacon and tomatoes
These satisfyingly crunchy pancakes are perfect for Sunday brunch, or a tasty lunch for the kids
Serves 4
Ready in 20 minutes
Ingredients
  • 3 Asda Smart Price eggs, separated
  • 75g Asda Smart Price self-raising flour
  • 4tbsp milk
  • 200g Asda Smart Price frozen sweetcorn, thawed
  • 2tsp Asda Smart Price vegetable oil
  • 250g pack Asda Smart Price streaky bacon, rind removed
  • 12 baby plum tomatoes, halved

Method
1 Put the egg yolks in a large bowl with the flour and milk, and whisk together until you have a thick batter. Season with salt and pepper. Whisk the egg whites into peaks, then stir a third of the mixture into the batter, gently folding in the rest. Pat any excess moisture off the sweetcorn with kitchen paper and fold it into the batter.

2 Heat a teaspoon of the oil in a nonstick frying pan. Add a good tablespoon of batter and cook until bubbles form on the top and it is golden underneath. Flip and cook the other side. You may be able to cook 2 at a time if you have a large pan.

3 Keep the pancakes warm as you make the rest - you should have enough batter for about 8. Fry or grill the bacon until crispy, and cook the tomatoes in the pan or under the grill for a few minutes until they soften. Serve the pancakes with the bacon and tomatoes.
