A quick supper that’s both delicious and easy to prepare

Ingredients
- 1 small Cantaloupe melon
- 2 red chillies, deseeded and finely chopped
- 2tbsp rice wine vinegar
- 3tbsp sunflower oil, plus extra for brushing
- 4 Asda whole mackerel
Method
1 Remove the seeds and skin from the melon and finely chop. Put into a bowl and mix in the chilli, vinegar and sunflower oil. Season to taste.
2 Preheat the grill to high. Make 3 diagonal slashes on each side of the mackerel almost to the bone. Brush the fish with a little oil and season generously.
3 Grill for 5 minutes on each side, until fish is fully cooked through. Serve immediately with a spoonful of the spicy salsa.
