An aromatic ice cream with a refreshing taste of the tropics

Ingredients
- 10 Asda passion fruit
- 284ml double cream
- 4 medium eggs, separated
- 100g icing sugar
- 3tbsp Cointreau or other orange liqueur (optional)
Method
1 Cut the passion fruit in half and scoop out the pulp. Rub through a sieve to remove seeds.
2 Whisk the double cream until it just holds its shape. Put the egg whites in a large bowl and whisk using an electric mixer, until they form stiff peaks. Add the icing sugar a tablespoon at a time and whisk until stiff after each addition, to make a meringue.
3 Mix the egg yolks then fold the yolks, fruit juice, Cointreau and meringue into the cream. Put in a plastic container and freeze for at least 4 hours. Remove from the freezer about 10 minutes before serving to soften slightly.
