Simple flavours bring the best out of these potatoes
For this recipe it is best to use new potatoes that are all a similar size and fairly small, so that they cook evenly. The added butter really enhances the flavour of the spuds and gives them an extra special taste. Ring the changes by flavouring the butter with herbs and spices.

Ingredients
- 1tbsp chopped fresh Asda mint, plus 4 whole sprigs
- Zest of 1⁄2 lemon
- 1tsp lemon juice
- 50g butter, softened
- 500g Asda new potatoes
- 1tbsp olive oil
Method
1 Mix the chopped mint, lemon zest and juice into the softened butter. Place on clingfilm and roll into a small sausage shape. Chill in fridge until hard.
2 Preheat the oven to 200C/ Gas 6. Gently rub the skins off the potatoes and rinse. Divide potatoes between 4 large pieces of greaseproof paper and add the sprigs of mint. Sprinkle with olive oil and season. Fold the paper into parcels, sealing it tightly so the steam won’t escape.
3 Bake for 50 minutes until tender. Open the parcels, then serve at once with the butter.
