Salmon with roasted veg

Ingredients
  • 1 courgette, thickly sliced
  • 1 red onion, cut into 8 wedges
  • 1 red pepper, cut into 8 pieces
  • 1 yellow pepper, cut into 8 pieces
  • 2tbsp Asda olive oil
  • 1 small aubergine, cubed
  • 2 x 260g packs Asda skinless salmon fillets
  • 2 slices lemon, plus extra to garnish
  • 4 sprigs fresh dill, plus more to garnish

Method
1 Preheat the oven to 200C/Gas 6. Put the courgette, onion and peppers in a large roasting tin with the oil and toss together, using your hands. Add the aubergine and toss again. Spread evenly and bake for 15 minutes. Remove from oven and stir to redistribute vegetables.

2 Lay a large sheet of foil on a baking tray and put the salmon in the middle. Put the lemon slices and dill on top, season and drizzle with 3 tablespoons water. Bring up the edges of the foil and seal to make a loose parcel with room inside for the air to circulate.

3 Put the salmon in the oven, along with the roast vegetables, and cook for a further 15 minutes.
