Ingredients
- 4 large Asda baking potatoes
- 6tbsp Asda pesto sauce
- 100g Asda English hard goats’ cheese, grated
- 1 large egg, separated
Method
1 Preheat oven to 200C/Gas 6. Scrub the potatoes and prick with a fork. Bake for 1 hour then, using a clean tea towel to hold the potatoes (they will be very hot!), cut each one in half.
2 Using a teaspoon, scoop out the flesh into a bowl and mash. Beat in the pesto sauce and goats’ cheese. Season to taste, then beat in the egg yolk.
3 In a clean, grease-free bowl, whisk the egg white until it forms soft peaks then fold into the mashed potato mixture.
4 Pile the potato back into the hollowed-out skins and return to the warm oven for 20 minutes. Serve piping hot.
