Cheesy leek and potato bake
Suitable for vegetarians
Comforting home cooking at its most scrumptious

Ingredients
  • 900g Maris Piper or King Edward potatoes, peeled and cut into 2cm pieces
  • 50g butter
  • 3 leeks, trimmed and cut into 1cm slices
  • 200g Asda Smart Price mature Cheddar, grated
  • 1 large egg, lightly beaten
Method
1 Preheat the oven to 220C/Gas 7. Boil the potatoes until tender. Meanwhile, melt half the butter in a pan and gently cook the leeks for about 10 minutes.

2 Drain and mash the potatoes with the remaining butter, the egg and three-quarters of the cheese. Season, stir in the leeks and turn into a large, ovenproof dish. Sprinkle the rest of the cheese over the top and bake for 10 minutes until the top is golden.
