Crab and avocado salad
A substantial salad packed with light, summery flavours
Crab is available all year, but is at its best in the spring and summer. The delicate sweet white meat is found in the claws, while the richer brown meat comes from the body.
Serves 2
Preparation time 10 minutes
Ingredients
  • 0.5tbsp mayonnaise
  • 0.5tsp wholegrain mustard
  • 0.5tbsp white wine vinegar
  • 2tbsp extra virgin olive oil
  • 0.5 cucumber
  • 1 ripe avocado
  • Juice of half a lemon
  • 1 x 80g Asda pack baby leaf salad
  • 1 Asda dressed crab
  • Lemon wedges, to serve

Method
1 In a bowl, whisk together the mayonnaise, wholegrain mustard, vinegar and olive oil.

2 Cut the cucumber lengthways into quarters, remove seeds and cut the flesh into chunks.

3 Halve the avocado, remove the stone, peel and cut into bite-sized chunks. Toss in bowl with a squeeze of lemon juice – this will prevent it turning brown.

4 Arrange the cucumber pieces, avocado, salad and crab on two plates. Drizzle lightly with the dressing and garnish with a wedge of lemon. Serve with crusty bread.
