Creamy mayo, flavourful herrings and crisp salad make for a classic combination

Ingredients
- 1 small baguette
- Butter, for spreading
- Handful ruby salad leaves
- 1 large tomato, sliced
- 190g tin herrings, drained
- Mayonnaise, to serve
Method
1 Cut the baguette on the diagonal into six even-sized slices. Lightly spread with butter that has been allowed to reach room temperature.
2 Add lettuce leaves to each slice of bread and top with a slice of tomato. Put the herrings on top of the salad and garnish with a generous spoonful of mayonnaise. Season to taste.
