Ingredients
- 1tsp mixed spice
- 4 cloves garlic, crushed
- 2 Asda bird eye chillies or 1 green chilli, deseeded
- 1tbsp salt
- 1tbsp whole black peppercorns
- 2tbsp olive oil
- 6tbsp white rum
- 2tbsp brown sugar
- 1kg Asda pork belly joint
Method
1 Put the mixed spice, garlic, chillies, salt and peppercorns in a blender and whizz. Add oil, rum and sugar and blend to form a paste.
2 Score the pork skin with a very sharp knife so the marinade can work its way into the meat. Rub the paste well into the skin and leave in the fridge for 4 hours or overnight.
3 Preheat the oven to 140C/Gas 1. Cook the pork in a roasting pan for 1 hour, then turn up to 200C/Gas 6 and roast for 30 minutes, basting often. Serve with the roasting juices.
