Halloumi kebabs
Suitable for vegetarians
Delicious veg-tastic kebabs with a zesty bite
Serves 8
Preparation time 25 minutes
Plus marinating time
Ingredients
  • 2 small red onions, peeled and cut into wedges, root attached
  • 1tbsp chopped, fresh Asda parsley
  • 1tbsp chopped, fresh Asda coriander
  • 100ml Asda Extra Special infused chilli oil
  • Juice and zest of 1 lime
  • 750g halloumi cheese, cubed
  • 2 red peppers, deseeded and cut into chunks
  • 16 button mushrooms
  • Few whole chillies (optional)

Method
1 Put the onions in a large, non-metallic dish. Add the herbs, oil and lime juice and zest. Stir in the cheese and veg. Cover and marinate in the fridge overnight.

2 Soak 8 wooden skewers in water for 20 minutes. Thread the veg and cheese onto each one.

3 Cook for 10 minutes over a hot barbecue, turning frequently, until the vegetables are tender.
