A thirst-quenching salad to serve with Chinese food

Ingredients
- 1 whole Asda cucumber, trimmed
- 3tbsp light soy sauce
- 4tsp sweet sherry
- 2tsp rice vinegar
- 1tsp caster sugar
- 2tbsp sesame seeds, toasted
Method
1 Cut the cucumber in half and, using a potato peeler, peel long strips down the length of each half. Place in a bowl.
2 In a separate bowl, whisk together the soy sauce, sherry, vinegar and caster sugar. Pour over the cucumber and marinate for an hour, stirring occasionally.
3 Just before serving, sprinkle with the sesame seeds.
