Suitable for vegetarians
A simple summery dish that needs little attention while it cooks and makes the best of summer produce

Preparation time 45 minutes
Ingredients
- 300g fresh peas, weighed shelled (about 600g unshelled)
- 1 bunch spring onions, chopped
- 2 Little Gem lettuces, shredded
- 25g butter
- 1tbsp chopped, fresh Asda parsley
- 1tbsp chopped, fresh Asda mint
- 1tsp caster sugar
Method
1 Put all the ingredients in a large shallow pan with 75ml of water. Season with salt.
2 Cover with a lid and cook over a low heat for 20 to 30 minutes until tender and most of the liquid has evaporated. Season before serving.
