Ingredients
- 50g Asda pine nuts
- ½ small baguette, in 1cm slices
- 3tbsp olive oil
- 1tbsp white wine vinegar
- 1 head cos lettuce, shredded
- 55g bag Asda wild rocket
- 50g Stilton, crumbled
Method
1 Preheat the oven to 200C/Gas 6. Bake the pine nuts on a baking tray for 5 minutes. Set aside. Cut the bread slices in half and, on another tray, drizzle with 1 tablespoon oil. Bake for 8 to 10 minutes. Whisk the rest of the oil with the vinegar and season.
2 Put the lettuce, rocket and croutons in a bowl. Add the Stilton and pine nuts to the dressing. Pour over salad and toss.
